Four Seasons Resort Maldives in Landaa Giraavaru welcomes back two-Michelin-starred Italian culinary artist and chef Gaetano Trovato from February 27 to March 5, 2023, continuing his unique cooperation with his Maldivian protégés at Blu Beach Club.

Chef Trovato will introduce his new Amolfo degustation menu, inspired by the experiences, cuisine, and flavours of his youth in Sicily, with the assistance of the Blu culinary team. Sicilian Branzino seabass, Caciocavallo Ragusano, and Pantellaria capers will join island-grown herbs and Landaa-laid eggs in dishes inspired by the "zero waste" philosophy Trovato is imparting to the Resort chefs as part of his mentorship, as well as his passion for producing and preparing the highest quality ingredients.

Twice a year, Chef Trovato visits Blu for a week-long residency during which his meal is open to the whole Blu Beach Club as part of an exciting cooperation. Throughout the year, his Tuscany-meets-Maldives enchantment is accessible via his on-site apprentices, who serve only two to four diners each night at two tables. They hone their abilities by often visiting Trovato's famed Tuscan eateries. This exchange enables the next generation of already competent Resort chefs to raise their craft to Michelin levels.
