Designed for the hours between work and dinner, Aperitivo Week centres on five cocktails accompanied by sharing plates. "Every drink on this menu has been built with intention," says Sher Thakur Singh, Director of Beverage at Four Seasons Hotel Mumbai. "Guests will find familiar aperitivo ingredients alongside less expected touches." Singh's appointment follows a broader movement of senior bar talent across the Four Seasons portfolio in India, including when Sher Thakur took the helm as bar manager at a sister property.

The Negroni Sbagliato and Cardinale provide recognisable links to Italy's cocktail canon, while the remaining drinks allow the hotel's beverage team to interpret the tradition more freely. The gin driven notes across the menu also nod to the hotel's own spirits partnership, seen previously in AER's collaboration with Stranger and Sons on a signature gin.

"We have noticed guests increasingly want an occasion that sits between a quick drink and a full dinner," says Nitesh Gandhi, General Manager of Four Seasons Hotel Mumbai. "It gives Opus and AER a new rhythm through the evening, a reason for guests to walk in earlier and stay longer."

The experience takes on two different characters across the hotel. Opus offers an indoor setting suited to daytime meetings and extended evenings, continuing the venue's reputation as a symphony of flavour served all day long at Opus, while rooftop venue AER places the ritual against panoramic views of Mumbai, building on themed cocktail formats such as a previous week long surreal cocktail experience staged at AER and a Paris to Tokyo mixology collaboration hosted at AER.
