Chef Hari Nayak Returns to Baraabaru for an Exclusive Indian Culinary Residency in the Maldives

2 to 8 November 2026

Four Seasons Resort Maldives at Kuda Huraa

Indian cuisine takes centre stage at Four Seasons Resort Maldives at Kuda Huraa this November as celebrated chef Hari Nayak returns to Baraabaru for a seven-day culinary residency from November 2 to 8, 2026.

Reuniting with Baraabaru's Head Chef Kishan Singh, Nayak will present a menu that draws on India's regional culinary traditions, much like a culinary tour of India, while incorporating contemporary techniques and ingredients suited to the Maldives' island setting.

The collaboration continues an established relationship between the two chefs, first covered in the culinary collaboration between Chef Hari Nayak and Baraabaru. Four Seasons describes their partnership as an exploration of Indian culinary heritage interpreted through the ingredients and character of the Indian Ocean.

A Contemporary Interpretation of Indian Classics

The featured dishes offer a revealing look at Nayak's approach to contemporary Indian cooking, balancing familiar regional flavours with unexpected combinations.

Daab Chingri brings together prawns, tender coconut and ground mustard, drawing on the coastal flavours of eastern India. Cashew Cod pairs fish with fermented rice crêpe, red chilli and curry leaf, while Shiso Chaat introduces an aromatic Japanese herb to the distinctly Indian combination of tamarind, yoghurt and chaat masala.

Chicken Barta completes the selection with roasted chicken, tomatoes and cashews, presenting recognisable Indian flavours through a refined restaurant format.

The menu's appeal lies in its restraint. Rather than disguising Indian cooking beneath elaborate international techniques, it uses selective reinterpretation to bring new dimensions to established dishes.

Baraabaru: Indian Gastronomy Above the Indian Ocean

Inspired by Kerala's traditional architecture, Baraabaru occupies a lagoon-side setting with an overwater dining deck.

Recognised among CNN Travel's Maldives' Finest Tables in 2022, the restaurant has developed a distinct identity around regional Indian cooking, fresh seafood and personalised dining. The kitchen's collaborative spirit was also on show in season two of It Takes Two to Tango at Baraabaru.

Head Chef Kishan Singh, whose career includes experience at prominent Indian hotels and who joined as Executive Chef at Four Seasons Resorts Maldives, brings an understanding of traditional flavours that complements Nayak's international perspective.

Nayak, meanwhile, has built an international career spanning the United States and Asia, including his association with Sona in New York and JHOL in Bangkok.

For travellers seeking a more distinctive culinary experience in the Maldives, the residency offers an opportunity to explore contemporary Indian gastronomy within one of the region's established luxury resort restaurants.
